Any residual soiling is broken down and reduced to ash by the high temperatures. To achieve even results without over-browning the food ­ always select the lowest temperature given in the recipe/cooking instructions on the packaging. Increasing the temperature may reduce the cooking time, but will lead to uneven browning. Roasting on the rack Calculating the roasting time The roasting time will depend on the type of meat, the size and thickness of the cut.
