Baker'sorbreadflour Several brands of baker's or bread flour are available nationally at larger supermarkets. Baker's flour was used for the development of most of the recipes contained in this guide. It is a high protein, white wheat flour, with 11-12% protein content, ensuring a higher quality and consistency to the baked bread. NEWZEALANDONLY:`ElfinHighGrade WhiteFlour'or`ChampionHighGradeFlour'. Thesearehighprotein, whitebreadflours, containing12%protein.
pOWdeRed mIlk
Milk and milk products enhance the flavour and increase the nutritional value of the bread. Powdered milk is convenient and easy to use (store in an airtight container in the refrigerator). Fresh milk should not be substituted for powdered milk unless stated in the recipe. Soy milk powder can also be used but produces a denser loaf.

Hints and tips for Better Bread making

`Jam Setta' brand setting mix contains the ingredient `pectin' which is a naturally occurring substance found in fresh fruit. The addition of `Jam Setta' to the jam recipes helps the jam to set. Ensure the collapsible kneading blade is in the upright position before adding ingredients to the bread pan. Do measure ingredients accurately weighed measurements are more accurate than volumetric measurements. Do add ingredients to the bread pan in the order stated in the recipe. Do use ingredients at room temperature.
NeveR Use the `PRESET TIMER' setting for recipes that contain perishable items, such as eggs, cheese, milk, cream and meats. NeveR Use self-raising flour to make yeasted bread unless recipe states otherwise. NeveR Immerse your bread machine or bread pan in water.
